Recipe for Chorizo and Turnip Soup: Keto Version

This soup was the first thing I made a few weeks ago. I wanted to make use of some Chorizo and turnips that were staring at me from my fridge. It was delicious, easy and healthy. This recipe was part of the Low Carb EHM Intermittent Fasting and Diet, which helped lose 65pounds over one year. Here’s my recipe for keto turnip and chorizo soup! Please comment below if you have tried it. This is a good way to introduce turnips to someone who has never tried them before. Turnips are a rare food that allows you to eat both the roots and leaves. They are available all year round, but their prime season is in late autumn and early winter. You’ll want to look for bright, firm roots and firm, green, firm leaves. Turnips come in many different varieties, but the most popular is purple and white.

You can sometimes find them with their leaves attached. However, don’t be shocked if you see them in the produce aisle. You can substitute any dark, firm green if you cannot find turnip (aka turnip leaf). I have used both kale and a mustard green with great results. Turnips are also very affordable, and who doesn’t like that? !

In this recipe their peppery flavor works perfectly. The chorizo complements and mellows the taste of these turnips. They are amazing together.

Spices in the soup also make a difference. Paprika adds a beautiful color and a smokey taste to chorizo. Cumin brings out the herbal and smokey side of this soup. This soup will make your house smell incredible!

It’s a simple recipe with ingredients that work well together. We haven’t yet mentioned how healthy this dish is.

Turnips & Turnip Greens

Turnips are delicious both in the leaves and root. The roots are packed with minerals, fiber and vitamins A, C. This recipe is great for those who have never tried turnips or turnip leaves.

Cumin is a wonderful spice! Cumin is another health powerhouse. It’s been proven to help with weight loss, blood sugar control and digestion. It is also a good source of iron and can even prevent foodborne illnesses. This soup is perfect for it. (2)

Turmeric is made from capsicum and is packed with nutrients. Its biggest benefit, however, comes in the form of vitamin A. Vitamin A belongs to the carotenoid group, which is also known for its anti-inflammatory, vision, antioxidant and iron benefits. It’s also delicious! (1)

How to Make It

Now that you know why I love this dish so much, here’s how you can make it.

Ingredients

  • 1 pound of ground chorizo
  • 1 large (or 2 small) turnips peeled & diced
  • Turnip greens, chopped into 4 cups
  • 1 medium yellow onion diced
  • 1 tsp of minced garlic
  • 1 tsp of paprika
  • 1 tsp cumin
  • 1 cube of chicken bouillon
  • 1 Bay Leaf
  • 5 cups of water
  • 1/4 cup heavy cream
  • Taste salt & pepper

Make It

Brown the chorizo in a heavy large soup pot (I like enameled cast iron). Add the turnips, onions, garlic and spices when it is almost brown. Cook the onions for 5 to 19 minutes, until they start to soften.Add the water, bullion and bay leaf. Bring to a rolling boil, then add the greens chopped, and reduce heat so that it simmers. Cook for 15 to 20 minutes. I like to add heavy cream just before serving. This soup is delicious, filling and SUPER healthy. Enjoy!
